Chicken and Kidney Bean Wraps

Chicken and Kidney Bean Wraps

Serving size: Serves 2

Cooking time: Less than 30 minutes

Ingredients:

  • 200g skinless chicken breast cut into small chunks
  • 200g tin kidney beans (can use Mexican chilli beans for extra flavour variation)
  • 200g tin corn kernels
  • ½ onion
  • ½ tsp of olive oil
  • 200g tin of diced tomatoes
  • small pinch of tumeric
  • small pinch of cumin
  • pepper to taste
  • 2 wholemeal tortillas or Lebanese breads
  • Shredded lettuce to serve

Method:

Step 1: Heat oil in pan and cook onion for about 1 minute.

Step 2: Add chicken and when chicken is cooked add kidney beans, corn, diced tomatoes, pepper, half tsp of cumin and turmeric and combine well.

Step 3: Cook over medium heat for about 5 minutes stirring occasionally.

Step 4: Layer tortillas with chicken and bean mix, top with shredded lettuce and enjoy.
