Christmas Summer Pudding

Ingredients

  • 900g mixed blackberries, blueberries and raspberries
  • Several slices of white bread

Method

  1. Combine berries in medium saucepan. Very gently bring to boil and simmer for 2-3 min. Let it cool.
  2. Line a medium pudding bowl with white bread (crusts removed). Press bread with fingers so the pieces stick together. You.may need to slice bread in half on the diagonal to make triangular pieces so that it fits better in the bowl.
  3. Spoon the berries and juice carefully into the bowl, and cover with remaining bread leaving no space at the top. Weigh it down with a heavy lid or plate with heavy weight on top and refrigerate overnight.

4. Unmould onto a serving plate, cut wedges and serve with a scoop of vanilla icecream.

Delicious and healthy!
